1½ lb pork tenderloin or pork shoulder, cut into 1½-inch cubes
2 tbsp olive oil
2 tbsp Jamaican jerk seasoning
1 tsp ground allspice
½ tsp cinnamon (optional)
2 cloves garlic, minced
1 tbsp soy sauce
1 tbsp lime juice
Salt and black pepper, to taste
Wooden or metal skewers
For the Mango Salsa
1 ripe mango, diced
¼ red onion, finely chopped
1 small red bell pepper, diced
1 tbsp fresh cilantro, chopped
1 tbsp lime juice
Salt, to taste
