Jamaican Jerk Pork Skewers with Mango Salsa

Marinate the pork: In a bowl, combine olive oil, jerk seasoning, allspice, cinnamon, garlic, soy sauce, and lime juice. Add pork cubes, season lightly with salt and pepper, and toss to coat well. Cover and marinate for at least 30 minutes (up to overnight for deeper flavor).
Prepare the salsa: In a separate bowl, mix mango, red onion, red bell pepper, cilantro, lime juice, and salt. Refrigerate until ready to serve.
Assemble skewers: Thread the marinated pork evenly onto skewers.
Cook the skewers: Grill over medium-high heat for 10–12 minutes, turning occasionally, until pork is cooked through and nicely charred. (Alternatively, cook in a grill pan or under a broiler.)
Serve: Remove skewers from heat and let rest for a few minutes. Top with fresh mango salsa and serve hot.
