Tuscan Salmon with Creamy Garlic Alfredo Penne

Preparation:
Cook the Salmon:
Preheat oven to 375°F (190°C).
Season the salmon fillets with olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper.
Heat a large oven-safe skillet over medium-high heat. Sear the salmon fillets for 2-3 minutes per side until golden brown.
Add the chopped sun-dried tomatoes and spinach around the salmon in the skillet. Sprinkle Parmesan cheese over the fillets.
Transfer the skillet to the oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
Prepare the Alfredo Penne:
Cook the penne pasta according to package instructions. Drain and set aside.
In a large saucepan, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese, salt, and pepper. Continue to simmer for 3-4 minutes until the sauce thickens.
Add the cooked penne to the sauce and toss until the pasta is well coated.
Serve:
Plate the creamy garlic Alfredo penne and top each portion with a piece of Tuscan salmon.
Garnish with chopped parsley and additional Parmesan cheese if desired.
