Marinate the pork: In a bowl, mix jerk seasoning, allspice, paprika, garlic, ginger, soy sauce, lime juice, and pineapple juice. Season pork chops with salt and pepper, then coat them in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
Preheat the skillet or grill: Heat olive oil in a large skillet over medium-high heat, or preheat a grill.
Cook the pork chops: Sear the pork chops for 4–5 minutes per side until fully cooked (internal temperature 145°F / 63°C) and nicely caramelized.
Optional garnish: Top with grilled pineapple slices and sprinkle with fresh cilantro or chopped green onions.
