Preparation:
First, heat a generous amount of olive oil in a large pot over medium heat.
Then add the onion and sauté until translucent.
Next, add the leeks, celery, carrots, red bell pepper, zucchini, and potatoes.
Mix well and cook for a few minutes until the vegetables begin to soften.
Now stir in the garlic, chili (if using), salt, black pepper, and thyme.
Cook for another minute until fragrant.
Cover the vegetables with the vegetable broth. Bring to a boil, then reduce the heat and let simmer for 15 minutes or until the vegetables are tender.
Shortly before serving, stir in some fresh parsley.
Garnish with additional parsley if desired.
