Prep the Crust: In a medium bowl, mix the graham cracker crumbs and melted butter until it looks like wet sand. Press half of this mixture firmly into the bottom of a glass trifle bowl or individual serving glasses. Save the rest for layering!
Whip the Cheesecake: In a large bowl, beat the softened cream cheese and sugar until smooth and creamy (about 2-3 minutes). Add the cocoa powder and vanilla, mixing until fully combined and luscious.
Lighten it Up: Gently fold the pre-whipped heavy cream into the chocolate cream cheese mixture. Do this carefully to keep it airy and mousse-like!
Assemble the Magic: Layer sliced bananas over the bottom crust. Spoon half of the chocolate cheesecake mixture over the bananas. Sprinkle the remaining crumb mixture on top, add another layer of bananas, and finish with the rest of the chocolate cheesecake.
Chill Out: Pop it in the fridge for at least 2–4 hours. This helps the layers set and the flavors meld.
