Directions:
Start by blending the pistachios in a blender or food processor until finely ground.
Add the banana, Greek yogurt, almond milk, honey or maple syrup, vanilla extract, and a pinch of salt to the blender with the ground pistachios. If you prefer a colder smoothie, add a few ice cubes as well.
Blend on high speed until everything is well combined and the smoothie is creamy and smooth. Adjust thickness by adding more milk or ice if necessary.
Pour the smoothie into a glass, and enjoy immediately! Optionally, sprinkle a few crushed pistachios on top for added texture.
