Mix dry ingredients: In a bowl, sift together flour, baking powder, sugar, and salt.
Combine wet ingredients: In another bowl, whisk together milk, egg, melted butter, and vanilla.
Make the batter: Slowly add wet ingredients into the dry mixture. Stir until just combined (don’t overmix – lumps are fine).
Cook pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly butter it.
Pour & cook: Pour ¼ cup batter for each pancake. Cook until bubbles form on top, then flip and cook until golden brown.
Serve: Stack them up and serve warm with butter, syrup, fruits, or toppings of choice.
