Layered Sweet Potato, Squash & Carrot Bake with Cranberry-Honey Drizzle

Ingredients:
Vegetable Layers:

2 large sweet potatoes, peeled and thinly sliced (500 g / 1.1 lb)
2 cups butternut squash, peeled and thinly sliced (300 g / 10.5 oz)
3 large carrots, peeled and thinly sliced (250 g / 8.8 oz)
Seasoning:
3 tablespoons olive oil (45 ml)
1 teaspoon salt (5 g)
1/2 teaspoon black pepper (2 g)
1 teaspoon dried thyme or rosemary (2 g)
1/2 teaspoon smoked paprika (1 g)
Cranberry-Honey Drizzle:
1/2 cup cranberry sauce (whole berry or homemade) (120 g / 4.2 oz)
2 tablespoons honey (30 ml / 40 g)
1 tablespoon orange juice or water (15 ml)
Optional Garnish:
Fresh thyme or rosemary, finely chopped (2–3 g)
Cracked black pepper
