Cook the pork: Heat a large skillet or grill pan over medium-high heat. Add pork and cook for 10–12 minutes, turning occasionally, until fully cooked and nicely caramelized.
Cook the plantains: In a separate skillet, heat oil or butter over medium heat. Add plantain slices and cook for 2–3 minutes per side until golden brown and tender. Lightly season with salt.
