Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place small mounds of shredded cheese on the parchment paper, leaving space between each mound.
Top each cheese mound with a few mini pepperonis.
Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and the edges are golden and crispy.
Allow to cool slightly before serving, as the chips will crisp up as they cool.
Variations & Tips

For a bit of spice, sprinkle a pinch of red pepper flakes over the cheese before baking. You can also experiment with different types of cheese, such as a spicy pepper jack or a smoky gouda, to add a unique twist to your chips. If mini pepperonis aren’t available, you can use regular-sized pepperonis cut into quarters. For a vegetarian version, omit the pepperonis and add a sprinkle of Italian seasoning or dried basil for extra flavor.
