Grilled Cheese Burrito Recipe: The Ultimate Melty, Meaty Comfort Food

How to Make a Grilled Cheese Burrito
Step 1: Cook the Ground Beef
Heat a skillet over medium heat. Add your ground beef and cook until fully browned, breaking it up with a wooden spoon.

Drain excess fat, then add taco seasoning, garlic powder, onion powder, and water.

Simmer for 5–7 minutes, stirring occasionally, until the liquid has mostly absorbed and the beef is flavorful.

Taste and adjust seasoning if necessary. Set aside.

Step 2: Prep Your Other Fillings
If using Mexican rice, prepare it beforehand or use leftover rice.

Warm up refried beans or black beans.

Mix together your cheese blend in a bowl.

Prep any optional sauces like chipotle mayo, nacho cheese, or sour cream.

Step 3: Assemble the Burritos
On a flat surface, lay out a large tortilla and begin layering ingredients:

Spread 1–2 tablespoons of sour cream (or chipotle mayo) down the center.

Add a layer of rice, followed by a scoop of seasoned beef.

Top with shredded cheese, crushed tortilla chips, and optional beans.

Drizzle with nacho cheese or extra sauce.

Fold the sides inward, then roll the tortilla tightly into a burrito.

Repeat for all 4 burritos.

Step 4: Grill the Burritos – The “Grilled Cheese” Part
Heat a nonstick skillet or griddle over medium heat.

Butter one side of the burrito lightly.

Sprinkle shredded cheese directly onto the skillet in a rectangle shape (about the size of your burrito).

Place the burrito seam-side down on the cheese and press gently. Cook until the cheese is melted and forms a crispy crust—about 2–3 minutes.

Flip and toast the other side (add more cheese if desired).

Remove once both sides are golden brown and crispy.
