Directions:
Prepare the Chicken
In a bowl, combine olive oil, lemon juice, oregano, paprika, garlic powder, salt & pepper.
Add chicken cubes, coat well, and marinate 15–30 minutes (or up to 4 hours).
Thread onto skewers (optional) and grill over medium heat 10–12 minutes, turning until cooked through.
Alternative: Pan-sear in a skillet until golden & cooked.
Make the Feta Pesto Sauce
Add feta, yogurt, pesto, lemon juice, olive oil & pepper to a blender or food processor.
Blend until creamy. Adjust thickness with a splash of water if needed.
Assemble Wraps
Warm pita or flatbread.
Spread a generous layer of creamy feta pesto sauce.
Add grilled chicken chunks.
Top with tomato, cucumber, red onion & herbs.
Optional: Finish with olives or extra feta crumbles.
Serve
Fold and press slightly to hold ingredients.
Serve warm with extra sauce for dipping.
