Garlic Mustard Chicken with Sautรฉed Peppers & Mushrooms + Creamy Mashed Potatoes ๐Ÿฅ”๐ŸŒถ๏ธ

way to cook:
Boil potatoes: Cook potatoes in salted boiling water for 15โ€“18 minutes until fork-tender. Drain and mash with butter, milk, salt, and pepper. Keep warm.
Season & sear chicken: Season chicken with salt and pepper. In a large pan, heat olive oil and sear chicken for 3โ€“4 minutes per side until golden and cooked through. Add garlic and mustard during the last minute of cooking, stirring to coat. Remove and set aside.
Sautรฉ vegetables: In the same pan, add a splash of oil if needed. Sautรฉ sliced onion, bell peppers, and mushrooms for 6โ€“8 minutes until softened and slightly caramelized.
Combine: Return the chicken to the pan, stir to combine with the vegetables, and cook together for another 1โ€“2 minutes.
Serve: Plate the mashed potatoes, top with the chicken-veggie mixture, and sprinkle with fresh parsley.
