Boil potatoes: Cook potatoes in salted boiling water for 15โ18 minutes until fork-tender. Drain and mash with butter, milk, salt, and pepper. Keep warm.
Season & sear chicken: Season chicken with salt and pepper. In a large pan, heat olive oil and sear chicken for 3โ4 minutes per side until golden and cooked through. Add garlic and mustard during the last minute of cooking, stirring to coat. Remove and set aside.
Sautรฉ vegetables: In the same pan, add a splash of oil if needed. Sautรฉ sliced onion, bell peppers, and mushrooms for 6โ8 minutes until softened and slightly caramelized.
Combine: Return the chicken to the pan, stir to combine with the vegetables, and cook together for another 1โ2 minutes.
Serve: Plate the mashed potatoes, top with the chicken-veggie mixture, and sprinkle with fresh parsley.
