Creamy Mushroom Chicken and Wild Rice Soup

Ingredients
3 tablespoons butter, divided
1 pound mushrooms, sliced
1 onion, diced
2 carrots, diced
2 stalks celery, diced
2 cloves garlic, minced
1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)
6 cups chicken broth
1 cup wild rice (or a wild rice blend)
1 ½ cups cooked chicken, diced or shredded
1 cup milk or cream
1 cup grated Parmigiano Reggiano (Parmesan)
Salt and pepper, to taste
Optional Add-Ins:
1 ounce dried mushrooms, soaked in 1 cup hot water for 20 minutes (reserve soaking liquid)
2 tablespoons white miso paste (adds umami depth)
