Creamy, Decadent, Effortless Cottage Cheese Mushroom Spinach Lasagna Bake

Directions:

1. Preheat oven to 375°F (190°C).
2. In a medium bowl, combine cottage cheese, squeezed spinach, 1/2 cup mozzarella, 1/4 cup Parmesan, egg, garlic powder, salt, and pepper. Mix well.
3. In a skillet, heat olive oil over medium heat. Add mushrooms and onion and cook until softened and lightly browned, about 5-7 minutes.
4. Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish.
5. Layer 3-4 lasagna noodles over the sauce, breaking them to fit if necessary.
6. Spread half of the cottage cheese mixture evenly over the noodles.
7. Top with half of the cooked mushroom and onion mixture.
8. Spoon about one-third of the remaining marinara sauce over the mushrooms.
9. Repeat layers with noodles, the remaining cottage cheese mixture, the remaining mushrooms and onions, and marinara sauce.
10. Top with the remaining noodles, and spread the remaining marinara sauce over the top.
11. Sprinkle with the remaining 1/2 cup mozzarella and 1/4 cup Parmesan cheese.
12. Cover the dish tightly with foil. Bake for 30 minutes.
13. Remove foil and bake for an additional 15-20 minutes, or until bubbly and golden brown. Let stand for 10 minutes before serving.
