Directions:
Preheat oven to 375°F (190°C).
Carefully slice each chicken breast horizontally to create a pocket without cutting all the way through.
In a bowl, mix chopped spinach, dried cranberries, brie slices, garlic, and thyme.
Stuff each chicken breast with the mixture and secure with toothpicks or kitchen twine.
Season the outside of the chicken with salt, black pepper, and smoked paprika.
Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden brown.
Optional: Mix honey and Dijon mustard, then brush lightly over the chicken.
Transfer skillet to the oven and bake for 20–25 minutes until chicken is cooked through (internal temperature 165°F / 74°C).
Remove toothpicks or twine, let rest 5 minutes, then serve warm.
