Coca-Cola Marinated Pork Loin

 

 

Step 1 – Marinate the Pork
In a large bowl, whisk together Coca-Cola, soy sauce, vegetable oil, Dijon mustard, ketchup, Worcestershire sauce, dry mustard, garlic, ginger, balsamic vinegar, and thyme. Place the pork loin in a large resealable bag or shallow dish. Pour the marinade over the pork, cover, and refrigerate for 24 hours, turning the meat occasionally for even flavor.

Step 2 – Roast the Pork
Preheat oven to 325°F (165°C). Remove pork from marinade and place it in a roasting pan. Discard the used marinade. Roast uncovered for about 20–25 minutes per pound, or until the internal temperature reaches 145°F (63°C).

Step 3 – Make the Cola Sauce
While the pork is roasting, prepare the sauce. In a saucepan, whisk together cornstarch and a splash of Coca-Cola to make a slurry. Add brown sugar, butter, dry mustard, remaining Coca-Cola, and balsamic vinegar. Bring to a simmer over medium heat, stirring until thickened and syrupy, about 5–7 minutes. Season with salt and pepper.

Step 4 – Baste for Flavor & Moisture
Halfway through roasting, spoon some of the cola sauce over the pork. Continue basting every 20 minutes until done. This creates that signature sticky, caramelized crust.

Step 5 – Rest & Serve
Remove the pork from the oven and let it rest for 10 minutes before slicing. Drizzle with extra cola sauce and serve.

Tips for Success
Marinate overnight – 24 hours gives the best flavor and tenderness.

Don’t skip the sauce – It’s what makes the pork so glossy and flavorful.

Check the temp – Overcooking can dry out pork loin; aim for 145°F and let it rest.
