Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the tenders:
Using a small knife, carefully cut a pocket into the thickest part of each chicken tender (donβt cut all the way through).
Stuff each with a piece of mozzarella cheese.
Set up the coating station:
In one bowl, whisk eggs with milk.
In another bowl, combine breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
Coat the chicken:
Dip each stuffed tender in the egg mixture, then coat in the breadcrumb mixture.
Press gently to help the coating stick.
Bake the tenders:
Place on the baking sheet and lightly spray with oil.
Bake for 20β25 minutes, or until golden and cooked through. Cheese may bubble a littleβyum!
Serve hot:
Great with marinara sauce for dipping! π
