Blackened Salmon & Garlic Shrimp Skewers with Buttery Polenta Rounds

Directions:
Prepare polenta:
1.1. In a saucepan, bring water or broth to a boil.
1.2. Slowly whisk in polenta. Reduce heat to low and cook 5–7 minutes, stirring frequently until thick.
1.3. Stir in butter, Parmesan, salt, and pepper.
1.4. Pour into a shallow dish, smooth the surface, and let cool until firm (30 minutes).
1.5. Once set, cut polenta into rounds and lightly pan-sear or grill for 2–3 minutes per side for a golden crust.
Prepare seafood skewers:
2.1. Preheat grill or skillet to medium-high heat.
2.2. In a bowl, toss salmon and shrimp with olive oil, smoked paprika, garlic powder, cayenne, thyme, salt, and pepper.
2.3. Thread shrimp and salmon alternately onto skewers.
Cook seafood:
3.1. Grill or pan-sear skewers 2–3 minutes per side, until salmon is cooked through and shrimp are pink.
3.2. In the last minute, brush with garlic butter mixture (melt butter, add garlic, lemon juice, and parsley).
Assemble plate:
4.1. Place polenta rounds on serving plates.
4.2. Top with blackened salmon & garlic shrimp skewers.
4.3. Drizzle remaining garlic butter over skewers.
4.4. Garnish with lemon wedges and parsley.
