Prepare the lobster
Cut the lobster shells lengthwise and gently pull the meat out, keeping it attached at the base. Pat dry.
Set up dredging station
Bowl 1: Flour seasoned with salt & pepper
Bowl 2: Eggs, beaten
Bowl 3: Panko, breadcrumbs, paprika, garlic powder, cayenne, salt & pepper
Bread the lobster tails
Dip each tail into flour → egg → breadcrumb mixture, pressing well to coat.
Heat the oil
Heat oil to 350°F (175°C).
Fry
Carefully lower lobster tails into the oil. Fry for 3–4 minutes until golden brown and crispy.
Drain & serve
Remove and drain on paper towels. Serve hot.
