Ingredients:
2 lbs (≈ 900 g) beef chuck or brisket, cut into large cubes
1 – 2 tbsp vegetable oil
4–5 shallots, sliced
4–6 cloves garlic, minced
1–2 tbsp fresh ginger, minced
1–2 tbsp fresh galangal, minced (or extra ginger)
2–3 stalks lemongrass, bruised
4–6 kaffir lime leaves (or bay leaves)
1–2–3 red chilies, sliced (adjust heat)
2–3 tsp ground coriander
1–2 tsp ground cumin or a pinch of aromatic spices (optional)
1 tsp turmeric or ground turmeric
2 cups thick coconut milk
1–2 tsp tamarind paste or lime juice
1–2 tbsp palm sugar or brown sugar
1–2 tsp salt, to taste
Optional whole spices: 1 cinnamon stick, 2 star anise, cloves or cardamom pods
Fresh cilantro or Thai basil (for garnish)
