Philly Cheese Steak Egg Rolls

Ingredients:
1 lb flank steak or ribeye, thinly sliced
1 tbsp olive oil
1 small onion, thinly sliced
1 small bell pepper, thinly sliced (optional)
1 cup provolone cheese, shredded (or a blend of provolone and mozzarella)
12 egg roll wrappers
Salt and pepper to taste
1 egg (for egg wash)
Oil for frying (vegetable or canola)
