Fit Christmas Slow-Roasted Lamb Shoulder with Garlic-Herb Greek Yogurt and Green Winter Vegetables Recipe

Ingredients:
1 lean lamb shoulder (4–5 lb)
2 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme
Zest of 1 lemon
Salt and cracked black pepper
Garlic-Herb Yogurt
1 cup plain Greek yogurt
1 clove garlic, finely grated
1 tablespoon fresh parsley, chopped
1 tablespoon fresh dill or chives, chopped
Salt to taste

1 bunch broccolini
1 lb Brussels sprouts, halved
12 oz green beans
2 tablespoons olive oil
1 tablespoon fresh rosemary
Juice of 1/2 lemon
Salt and pepper
Garnish
Fresh herbs (parsley, rosemary)
