🍋🧇Lemon Pound Cake Waffles

way to cook:
1. Preheat waffle iron and lightly grease it.
2. In a large bowl, whisk together cake mix and pudding mix.
3. Add eggs, oil (or butter), milk, vanilla, and lemon zest.
4. Mix until smooth and thick (batter will be thicker than regular waffle batter).
5. Spoon batter into hot waffle iron, spreading gently.
6. Cook until golden brown and crisp, about 3–5 minutes depending on your waffle iron.
7. Remove and keep warm while finishing the remaining batter.
Lemon Cream Cheese Icing
Ingredients
4 oz cream cheese, softened
2 Tbsp butter, softened
1½–2 cups powdered sugar
2–3 Tbsp fresh lemon juice
½ tsp vanilla extract
Lemon zest (optional)
Instructions
1. Beat cream cheese and butter until smooth and creamy.
2. Gradually beat in powdered sugar.
3. Mix in lemon juice, vanilla, and zest until smooth and drizzleable.
4. Adjust consistency with more lemon juice or powdered sugar if needed.
To Serve
Drizzle icing generously over warm waffles
Garnish with lemon zest, powdered sugar, or fresh berries
Optional add-ons: whipped cream, blueberries, or a light dusting of powdered sugar.
